Asparagus Italian Style



Asparagus  Italian Style
¾ cup water
½ tsp. salt (optional)
3 tbsp. olive oil or real butter
1 tbsp. fresh chopped parsley
Dash of pepper
1 lb. fresh asparagus tips

Bring water to boil in med sauce pan, add salt, olive oil, parsley, pepper, and asparagus. Return to boil, reduce heat to low, cover and simmer for about 5 minutes. Remove lid and continue cooking for about 3-4 minutes. Drain and serve.

Asparagus with lemon and cashews



Asparagus and Lemon Cashew Butter

1lb fresh asparagus spears, washed whole
1 sauce pan boiling water
¼ cup real butter
2 tsp. fresh lemon juice
¼ cup organic cashews halved or chopped

In sauce pan of boiling water, cook asparagus until tender, about 10-12 minutes. Drain. Place in serving dish. 

In small pan, melt butter over low heat, add in lemon juice and cashews. Simmer on low for about 2 minutes to incorporate flavor. Pour over asparagus and  top with small amount of lemon zest if desired. Serve.

Green Bean Bacon Wraps



Green Bean Bacon Wraps
1 lb. fresh green beans, washed, whole
1 pan boiling water (to blanch)
1 Tbsp. olive oil
1 tsp. Lemon juice
Seasonings, salt and pepper
1 package regular cut bacon

In sauce pan of boiling water, quickly blanch green beans for about 4 minutes to partially cook. Drain from water, put in mixing bowl, and let cool slightly.  Once able to handle them (just a few minutes), drizzle small amount olive oil, lemon juice, salt pepper and seasonings (I used a pinch onion powder, garlic powder, and tsp. parsley -but adjust to whatever you like. Mrs Dash Garlic and Herb mix works well too!) Lightly toss in mixture.
Pre-heat your oven to 350 F.
Line a baking sheet with parchment paper, take about 4-5 beans in hand and wrap the bunch with 1 piece of bacon. Lay on cooking sheet (you can use a wooden toothpick to hold bacon if needed or just lay with bacon end down.) Wrap remaining beans, placing wraps on cooking sheet about an inch apart.
Bake at 350 F in oven for about 15 minutes or until bacon is fully cooked.
Serve with baked chicken breast, or lean steak.
