Quick Mexican Style breakfast
4 eggs, scrambled
¼ cup chopped onion (more or less to your preference)
1 small chili – jalapeno (or whatever you prefer chopped
small)
1 tsp. Olive oil
½ cup crumbled Queso Fresca, or whatever your favorite
cheese is- shredded.
Salsa
4 Corn tortillas
In fry pan, over med heat, warm 1 corn
tortilla per person. Set aside in plate.
Add olive oil to pan, and lightly fry the
onion and chili until tender, add the scrambled egg and cook until done.
Place med. amount on warmed tortilla and top
with crumbled cheese, this is shown in picture and is the base for whatever you
would like to add. Top with salsa, cilantro, fresh chopped tomatoes,
chilies, salt and pepper. This is a base
to build a breakfast- add whatever you prefer!
Makes about 4 tostada style breakfast servings.
